Built in 1812, the name is fitting. Paliomylos was powered by a natural water stream that originated from the nearby mountains. A hand built stone aqueduct would collect the water as it burbled by, and steer it toward the mill from above. It would then cascade onto a metal wheel causing it to rotate. The wheel was connected to heavy, hand carved stone plates. Grains were crushed in-between the stone plates and turned to flour. True Story: Grain farmers use to load donkeys, horses & mules, and come to the mill to turn their crops into flour. They would then sell it at the market. At Paliomylos we see viticulture and wine making as an art. With over 1000 vines we are provided with a large canvas; We consider ourselves great artists. Located 20 - 55 meters above sea level and 300 meters from coast, the location of Paliomylos provides an environment for high quality grapes that lead to a unique wine. With long warm summers and cool winters, grapes in Paliomylos ripen easily that lead to lower acidity and higher sugar levels. Higher sugar levels allow for greater percentage of alcohol, which makes the wine more full-bodied. With a naturally dry climate and an advanced irrigation system, we have full control on how much water is exposed to each vine. Although we prefer keeping most vines fairly dry, this allows for a balanced vineyard and control of our wine from the beginning. Northern and eastern winds provide clean air to the vines and play an essential role to the characteristics of the grapes. Winds from the north are referred to as “meltemi” and occur from 7am to 3pm. Winds from the east are known as “boucadoura” and occur from 3pm to 6pm. Just before the grapes are fully ripe, the winds help cool and slow down the process. This allows for more developed flavors.
